Broad beans can be used in soups, stews, casseroles and veggie patties. Add to dips, spread over toast with avo for brunch, or with some olive oil and basil to top bruschetta. To prepare, soak the beans overnight in plenty of water. The next day, peel the beans by squeezing each one between your thumb and forefinger. The skin should slip off easily. This step is time consuming, but a must for proper texture with the larger beans in particular. Place the beans in a large pot and cover with plenty of fresh water. Add a little salt, bring to a boil, then reduce to a simmer and allow to cook for about 45 minutes until tender but not mushy. Drain beans.
