Lupin or lupini beans are legumes. They are extremely popular as a street food and bar food throughout the Middle East, Mediterranean and Latin America. In Portugal, lupin is referred to as tremocos and in Arabic, termos. They are an excellent source of protein and stocked with other nutritional benefits. You can enjoy lupin beans as a healthy snack, antipasto or after a meal, as they do in Italy.

Dried lupin beans are extremely bitter before being prepared, and must be soaked overnight, cooked the next day, then rinsed several times a day for the next 5 or 6 days. Don’t let this process change your mind, the end result is well worth the wait, and besides, it only takes 5 minutes of your time a day. To prepare, rinse the beans and remove any bad looking ones. Soak overnight in plenty of water. The next day, drain and rinse, then place beans in a large pot with plenty of fresh water. Bring to the boil then reduce to a simmer and allow to cook for 45-50 minutes stirring occasionally. Remove from heat, drain, place in a large bowl and cover with water. Rinse the beans for 5 or 6 days, repeating the process 3 to 4 times a day. The bowl does not need to be refrigerated. On the fifth day, taste a bean to check for bitterness. Continue to change water until they are no longer bitter (They still might not taste great though). To complete the preparation of the lupins, but also to preserve them until you eat them all, you need to prepare a brine with 60-70 g of salt per liter of water. Drain the beans and place in this brine. Allow to soak for a few hours before tasting. Refrigerate the beans with the brine, this is their home while you continue to enjoy them. To eat a lupini beans, bite off the top of the bean where the white part is to break open the skin ; squeeze gently and pop the bean into your mouth. They’re quite addictive once you get the hang of it.
