Soybeans are considered a complete protein and among the best plant based protein sources. They are gluten free, rich in fat, fiber, and various minerals and vitamins including folate, molybdenum, copper, and manganese. Additionally, soybeans contain various bioactive compounds including isoflavones, phytic acid and saponins. Isoflavones in particular mimic estrogen and are responsible for many of soybeans health effects. Soybeans may reduce cancer risk, alleviate menopause symptoms and improve bone health.

Rehydrated and cooked soybeans can be added to a variety of salads, soups, stews and curries. They can also be blended and used to thicken soups and sauces, or used to create veggie patties. Additionally, you can create your own dairy free soy milk from rehydrated soybeans. To prepare soybeans for cooking, rinse soaked in cold water at a ratio of 1:8, for 8 hours or overnight. Remove any discoloured beans. When ready to cook, drain, rinse, and add to a big pot with plenty of water. Bring to the boil, skimming off any grey bubbles that appear. Reduce heat slightly and allow to boil for about 3 hours. Top up the water if it seems to be dropping low. Once the beans are cooked, skim off any loose hulls and strain. You can reserve the liquid and use as vegan stock. You can make a big batch and store the cooked soybeans in freezer bags with a little bit of the cooking liquid. The stock can be frozen too.
