Spelt, also known as hulled wheat, is one of the oldest cultivated grains in the world. In Greek mythology spelt was a gift from the goddess Demeter. Compared to common wheat, spelt has lower gluten and thus can be tolerated by those sensitive to wheat. Spelt is also higher in protein and lower in calories than wheat flour. It has a slightly sweet and nutty flavor. This organic product is GMO free, and contains no preservatives or artificial flavours.

Whole spelt berries are excellent for grain bowls, salads, soups or risotto. It can be served as a substitute to rice, or added to a supersalad as you would quinoa, millet or freekeh. To prepare, bring 1 part of rinsed spelt grains and 3 parts water/stock/liquid to the boil, and then cover, reduce heat and allow to simmer for about an hour until the grains are tender but chewy. Add more (warm) liquid if needed. The longer the cook time, the more tender the spelt berries will be.
