Bulgur is commonly found on a Mediterranean table and is available in three differenet textures, fine, medium and coarse. Bulgur is made by parboiling, drying, then cracking the finest quality whole wheat grain. This bulgur has a fine structure and a nutty flavour and can be cooked into a porridge, added to salads like Tabbouleh, or used to bind veggie patties or meatballs like kofte.

This fine texture means less cooking time! Bulgur can be prepared by soaking, roasting, or cooking. to add to a salad like Tabbouleh, you can choose to either soak the bulgur in lemon juice or water for about 10 minutes. To prepare a porridge, bulgur cooks similar to oats. Bring 1 part bulgur and 2.5 parts water/milk/stock to the boil, then reduce and allow to simmer for 10-15 mins until a smooth consistency is reached.
