Hazelnuts are available both in-shell and shelled. These shelled raw hazelnuts have a buttery texture and nutty flavour and can be used in both sweet and savoury dishes, roasted, used to prepare a dairy free nut mylk, ground into a gluten free flour or blended into a nut spread. Hazelnuts may be most well known for being an ingredient in chocolate spreads.

To remove the bitter skins, place a single layer of hazelnuts on a baking sheet and bake for 15 to 25 minutes at 135 C. Place the hot nuts on a dampened dish towel and fold it over. rub the nuts with the towel, releasing the skins. There are so many creative ways to incorporate hazelnuts into your cooking. Hazelnuts are great to use in desserts including pie crusts, cookies and brownies. Hazelnut meal can be used for gluten free baking. You could even make your own hazelnut butter as an alternative to peanut butter. To do so, blend the nuts in a food processor with a drizzle of coconut oil and honey (optional). Hazelnuts make a great snack, or can be added to trail mix or grazing platters. Roast them in a pan or in the oven with whatever seasonings you fancy.
