You could add black eyed peas to everything from salads, stir fries and soups to casseroles and grain bowls. Whilst you don’t need to soak black eyed beans, doing so greatly reduces the cooking time. Soak overnight for convenience. Add drained beans and enough water or stock to cover the beans. Cover your pot and bring to the boil. Then reduce to a simmer, leave the lid slightly open and cook until tender ~ 45 mins. Add more water/liquid if necessary.
