There are so many ways to include dried green peas in your diet! Whole peas can be sprouted, which increases their sweetness, vitamins and enzymes. When ground into a powder first, peas can be made into a split pea soup in about 3 minutes! Ground peas make an excellent thickener for other dishes and can be used as a binding agent in veggie patties. Add whole peas to soups and stews. Puree cooked peas with your favourite herbs and spices and serve as a side dish. To prepare peas, soak overnight or for at least 2 hours. When ready to cook, drain, rinse, and place in pot with plenty of fresh water. Bring to a boil then reduce to a simmer and cook for about an hour or an hour and a half until the peas are tender.
