Millet can be consumed as part of breakfast cereals, in the form of porridge or as an ingredient of soups, stews and breads. It can also be added to salads. You can choose to toast the raw millet in a dry pan before cooking to enhance its nutty flavor. The first method results in fluffy grains similar to quinoa: Bring 1 part millet and 2 parts water or stock to the boil (adding whatever seasoning you like). Decrease the heat to low and allow to simmer for about 15 mins until the grains absorb most of the water. Remove from heat and allow to sit covered for 10 mins to fully absorb the liquid before fluffing with a fork. The second method uses more water to create a porridge like consistency. Bring 1 part millet and 3 parts water, milk or any liquid to the boil stirring occasionally. Reduce heat and simmer, stirring occasionally to reach preferred consistency. Alternatively, millet seeds can be ground into millet flour which can be used as a gluten free substitute for wheat flour to make flatbreads, pancakes or incorporated into baked goods such as muffins and cookies.
