The splitting of peas allows for faster cooking time. Peas are one of the oldest known crop. The ancient Greeks, Romans, and Egyptians all cultivated and consumed peas. Green split peas have a sweeter flavour than yellow split peas, but share similar nutritional content and cooking time. Green split peas are used in soups, stews, curries and even in desserts.

The great thing about split peas is that they don’t have to be presoaked in water before cooking. To prepare, rinse the peas and place in a pot and cover with plenty of water. Bring to a boil, then reduce and allow to simmer uncovered for about 30-40 mins or until tender. Use in soups, curries, veggie fritters, side dishes. Split peas can also be used in sweet puddings, cookies, fudge and halva.
