Amaranth can be enjoyed as a breakfast porridge and is excellent for grain bowls, salads, soups or risotto. It can even be popped as you would pop corn. It can be served as a substitute to rice, or added to a supersalad as you would quinoa, millet or freekeh. To prepare, bring 1 part of rinsed Amaranth seeds and 2 parts water/milk/stock/liquid to the boil, and then partially cover, reduce heat and allow to simmer for about 15 mins until the seeds are tender.
