Calasparra paella rice is a centuries-old short grain rice from the mountains of Murcia in Spain. At 1300 feet above sea level, the constant flow of cold fresh mountain water means that the rice matures more slowly than other varieties. This produces a highly absorbent grain, ready to absorb flavorful broths of paella and risottos.
While rice is typically seen as a source of carbohydrates, it also has important micronutrients such as B vitamins (such as niacin, riboflavin and thiamin) as well as managanese, magnesium and iron.
