Barley is high in fiber, complex carbohydrates, protein, and iron. Additionally, barley packs lignans, a group of antioxidants linked to a lower risk of cancer and heart disease. Barley improves intestinal health, aids weight loss, prevents gallstones and lowers cholesterol.
Barley flakes can be enjoyed for breakfast as a porridge, or as a breakfast cereal base for muesli or granola. Barley flakes are also a great addition to breads, or crumble toppings. Barley flakes cook similar to oats. To enjoy a porridge, Bring 1 part barley flakes and 2 parts water, milk or any other liquid to a boil, stirring occasionally. Reduce to low heat and allow to simmer, covered, for about 15 mins to reach a soft and creamy consistency.
