Yellow corn flour, also known as maize flour, is made from finely ground whole dried corn. It is considered a whole grain flour. Corn flour is often combined with a binder to provide shape to baked goods and foods. Although it doesn’t taste good raw, cooked corn flour has a sweet earthy flavour. Don't confuse corn flour with masa harina that's used to make tortillas or cornmeal thats used to make cornbread. Masa harina is made from corn that has been soaked in limewater. Cornmeal has a very different texture.
