Easy to prepare, you can make a big batch and store in the fridge for quick prep. It is quite versatile and can be used as a substitute for rice, pasta or wholegrains. Enjoy pearl couscous as a side for curries, stir fries, hot pots and stews - toss with a pasta sauce - add to a salad similar as to how you would add quinoa. Pearl couscous can also be added to soups or hearty stews just before serving. It can even be used for sweet puddings, mixed with dried fruit and nuts. To prepare, use about 1 1/4 cups of water or broth for 1 cup of dry couscous pearls. Bring to the boil and then reduce the heat and allow to simmer for about 10-15 minutes or until the liquid is absorbed and the couscous is tender. For added flavour and texture, lightly toast the pearls with a little oil or butter in the pan before adding the liquid.
