Fennel (Foeniculum vulgare) is a perennial herb that belongs to the carrot family. The fennel has a flavour similar to that of sweet anise seed. Fennel seeds are widely used throughout India, Afghanistan, Iran, and the Middle East. It is used in spice blends like garam masala or panch phoron, as well as Chinese five spice powder. Fennel is the main flavouring used in Italian sausages.
Fennel seeds can be added to soups, sauces, fish dishes, lamb- or potato-based curries, pickles, breads, cakes, pancakes, desserts and drinks! Lightly crush the seeds before adding to dishes or brewing for tea. This helps release more of its sweet licorice flavour.
