Because they hold their shape so well, green lentils are ideal for salads and side dishes. Use 3 cups water to 1 cup lentils. Boil and simmer for about 20 minutes until tender. Cooking time may vary, so it is recommended to check for tenderness while cooking. Do not add salt to water during cooking as this can toughen the skin.
