These raw peanuts can be roasted in the oven with the shell still on, or can be cracked first to reveal the beautiful raw red skin peanuts. To roast, rinse the peanuts in the shells and pat dry with a towel. In a bowl, toss the peanuts along with some neutral oil and sprinkle with a little salt. Place on a tray in a single layer and roast in a 180 C preheated oven for about 25 mins, turning them frequently. Allow to cool slightly and enjoy. Delicious on their own, roasted peanuts are a perfect snack. They can also be combined with other nuts, crisps, seeds and dried fruit. Toss roasted peanuts into salads and pasta dishes for added flavour and texture, or sprinkle over smoothie bowls and porridge for some added protein.
