Pink peppercorns are not a true peppercorns, but are the ripe berries of the Brazilian pepper tree. Since they are the same shape and size as true peppercorns, they are marketed under the name “pink peppercorn.”
Pink peppercorns can be used whole or ground. Pink pepper pairs very nicely in light sauces, seafood and salad dressings due to their lovely color and delicate taste. When used in cooking, pink pepper should be added towards the end, as high heat and long cooking times can destroy the flavour.
