Quinoa, often categorized as a superfood, has long been prized for its nutrition- the Incas referred to Quinoa as the mother of all grains. Although commonly referred to as a grain, Quinoa is actually a seed that grows in a rainbow of colours, from white to black to red to green and many colours in between. This blend includes black red and white quinoa. When cooked, quinoa is soft and fluffy, with a slightly nutty taste. It can also be milled into flour, rolled into flakes and used to make various foods like pasta and bread. This organic product is GMO free, and contains no preservatives or artificial flavours.

Quinoa is one of the few plant foods considered a complete protein, offering all of the essential amino acids in sufficient amounts. It is gluten free and a good source of fiber, iron, magnesium and calcium. It reduces inflammation, lowers cholesterol and improves heart and gut health.

Mixed quinoa can be enjoyed hot or cold. It holds its shape well during cooking, and is a great addition to hot or cold salads and wraps. It works well as a substitute for rice in many dishes. You could prepare a large amount and keep it in the fridge for quick use. To prepare, rinse the quinoa and place in a pot with 2 parts water. Bring to the boil over medium heat, and then reduce the heat to a gentle simmer. Cook until the quinoa has absorbed all of the water, about 20 minutes. Remove the pot from heat, cover, and let the quinoa steam for 5 minutes so it turns out nice and fluffy.
