Rice malt syrup also known as brown rice syrup, is a natural sweetener produced by breaking down starches found in brown rice with the help of natural enzymes. Rice malt syrup is 100% fructose free and safe for people following a low FODMAP diet. It can be used to replace sugar, honey or other sweeteners. When replacing the sugar in a recipe with rice malt syrup, use 25% more of the syrup. 1 cup of sugar can be replaced with 1 1/4 cup of rice malt syrup. Since it is a syrup, you will have to reduce the liquid in the recipe (for example milk) by 1/4 cup (or 25%).
