The practice of drying tomatoes in the sun was originally done on roof riles and most likely originated in Italy, in Europe, for the purpose of preserving the tomatoes for use during winter. Sun-dried tomatoes usually have a deeper and richer flavour than fresh tomatoes. Add to salads, pastas, sandwiches, pizzas, dressings, casseroles and to baked breads and pastries!

Sundried tomatoes can be used to perk up a variety of dishes. Chop them up and add to a salad - blend with a pesto - add to a toasted sandwich - toss them into a pot of vegetable broth - add to a platter of antipasto - mix into dough for flavourful and colorful bread. Sundried tomatoes can be partially rehydrated by soaking in hot water or liquid.
