To extract the seeds, split the vanilla pod with a sharp knife and scrape down the seeds by dragging the back of a knife along the pods. One vanilla bean is equivalent to about 3-4 teaspoons of vanilla extract. So, if you are substituting one for the other, you may only need part of the bean for the recipe. Don't throw away the pod! You can use it to infuse liquids such as milk for custard or icecream, or you can add it to your sugar container to get vanilla flavored sugar.
