Sorghum seeds are excellent for grain bowls, salads, stews, soups or risotto. Sorghum can be served as a substitute for rice or added to a supersalad as you would quinoa, millet or freekeh. To prepare, soak the sorghum grains overnight in plenty of water and a splash of lemon juice or apple cider vinegar. To cook, rinse and drain well, then add to a pot with 5 cups of water and add any desired seasoning. Cover and bring to the boil, then reduce heat to a simmer and allow to cook for 45 mins or until the grains are tender and slightly chewy. Additionally, sorghum seeds can be popped like popcorn!
