Spelt, also known as hulled wheat, is one of the oldest cultivated grains in the world. In Greek mythology spelt was a gift from the goddess Demeter. Compared to common wheat, spelt has lower gluten and thus can be tolerated by those sensitive to wheat. Spelt is also higher in protein and lower in calories than wheat flour. It has a slightly sweet and nutty flavor.

Spelt flakes can be enjoyed for breakfast as a porridge, or as a breakfast cereal base for muesli or granola. Spelt flakes are also a great addition to breads, or crumble toppings. Spelt flakes cook similar to oats. To enjoy a porridge, Bring 1 part spelt flakes and 2 parts water, milk or any other liquid to a boil, stirring occasionally. Reduce to low heat and allow to simmer, covered, for about 5 - 10 mins to reach a soft and creamy consistency.
