To prepare, bring one cup water or broth to a boil in a medium saucepan. Remove from heat and add couscous along with a splash of olive oil or a dab of butter. Stir, cover saucepan with lid, and let sit for 10 minutes. Season with salt. Fluff and serve. It can be used in salads, or served with stews, tangines or curries. Use couscous to prepare a sweet pudding! Add almond milk or orange juice to couscous made with plain hot water and season with cinnamon, sugar, and orange zest. Top with nuts and dried fruit.
