Moghrabieh, or Lebanese couscous, isn’t actually couscous; It is small balls of toasted semolina flour with an enjoyable chewy and buttery texture. Compared to pearl couscous, moghrabieh is larger in size. Moghrabieh is also the name of a traditional Lebanese dish - the couscous is excellent for absorbing flavourful broths.

Easy to prepare, you can make a big batch and store in the fridge for quick prep. It is quite versatile and can be used as a substitute for rice, pasta or wholegrains. Moghrabieh is the name for both the couscous and a traditional Lebanese dish where the couscous is cooked in a flavourful broth with chickpeas, onion and sometimes topped with either chicken or lamb ( which were used to make the broth). Enjoy moghrabieh as a side for curries, stir fries, hot pots and stews - toss with a pasta sauce - add to a salad similar as to how you would add quinoa. Moghrabieh can also be added to soups or hearty stews just before serving. It can even be used for sweet puddings, mixed with dried fruit and nuts. To prepare, you could either cook like pasta, or use the absorption method: use about 1 1/4 cups of water or broth for 1 cup of dry couscous pearls. Bring to the boil and then reduce the heat and allow to simmer for about 10-15 minutes or until the liquid is absorbed and the couscous is tender. For added flavour and texture, lightly toast the pearls with a little oil or butter in the pan before adding the liquid.
