Bay leaves come from a family of evergreen trees and shrubs (Laurus nobilis) originating in parts of Asia and America. Similar plants are also found in the Mediterranean. These aromatic leaf spices have a flavour profile similar to thyme, clove, coriander and eucalyptus all combined. Many regard bay leaves as a staple ingredient in broths, soups and stews. Bay leaves are commonly used in broths, soups, stews and casseroles where they have time to brew and release optimum flavour. They can also be used in marinades for meat and fish and in pickling solutions. Bay leaves are also occasionally added to a cream mixture to infuse a dessert like rice pudding with a subtle herbal flavour. Remove the bay leaves before serving.
