Mahlepi, also known as mahlab or mahlebi, is an aromatic spice that has been used for centuries in the Middle East and Mediterranean. It is made from the cherry stones of a specific tree called the St Lucy cherry or Mahaleb. The cherry stones are cracked to extract the seeds, which are ground to a powder. Mahlepi has a unique almond sweet nutty and slightly bitter flavour. It is famously used to prepare Greek Easter bread, Tsoureki. Mahlepi pairs extremely well with flavours of star anise, aniseed and caraway.

Mahlepi can reduce blood pressure and increase fat burning to aid in weight loss and prevent diabetes. It is traditionally used to treat kidney and abdominal pain, shortness od breath, heart disease and malaria.

Mahlepi powder can be used to spice and flavour baked goods like breads , cookies and pastries. It also pairs well with dairy, either in the form of cheese or milk. Add it to rice puddings, crème brulee and cheese based tarts. Mahlepi compliments recipes that call for nutmeg, anise, aniseed or caraway.
