Szechuan peppercorns are indigenous to Scechwan province of China, and are most commonly known as being a key ingredient in Chinese cooking. They are not of the pepper family like black peppercorns. The flavour is a unique slightly lemony, tangy taste that is spicy and can bring a numbing feel to the mouth and lips.

Szechuan peppercorns can be used whole or ground. They are generally added last when used in cooking, and are often roasted prior to use. Szechuan pepper pairs particularly well with duck and chicken and tofu/tempeh.
