How to enjoy

Amaranth can be enjoyed as a breakfast porridge and is excellent for grain bowls, salads, soups or risotto. It can even be popped as you would pop corn. It can be served as a substitute to rice, or added to a supersalad as you would quinoa, millet or freekeh. To prepare, bring 1 part of rinsed Amaranth seeds and 2 parts water/milk/stock/liquid to the boil, and then partially cover, reduce heat and allow to simmer for about 15 mins until the seeds are tender. Amaranth seeds can also be sprouted by soaking them and then allowing to sprout over the next few days.
