Add alfalfa sprouts to sandwiches, wraps, or use to garnish salads or dishes. To sprout your own alfalfa, rinse 2 tablespoons of alfalfa seeds, place in quart jar or any wide neck jar, add about 1/2 cup of cool water. Cover with a fine mesh material and soak for 8 hours or overnight. Drain all the water out, then invert the jar over a bowl, slightly angled to allow air to circulate. After another 8 hours, rinse and drain again. Repeat the rinsing and draining process about 2-3 times a day for about 3 days until tiny sprout tails appear. Then move the container to indirect light and allow to grow a little more. Sprouts should be ready to harvest in 3-5 days. To harvest, remove from jar and rinse. Refrigerate in an airtight container.
