Black turtle beans are great in chilis, stews, soups and dips. They can also be pureed and used in veggie burger patties. To prepare, soak the beans overnight in water. Drain and place in pot with new water. Allow to come to a boil for about 15 mins before reducing the heat and allowing to simmer until tender ~ 1.5 hrs. You could use a pressure cooker to speed things up.
