The simplest method to prepare borlotti beans involves soaking them in a bowl of water overnight. The next day, drain the beans and place in a pot of cold water. Bring to the boil and skim any foam that forms at the surface. Reduce heat to medium and simmer, partially covered, for 30 minutes to 1 1/2 hours until beans are tender.
