Brown rice is a whole grain and considered a low glycemic index food. It is high in fiber and nutrients including B vitamins, folate, iron, magnesium, and selenium. Brown rice helps promote fullness, aid weight loss and lower cholesterol.

Brown rice takes a little longer to cook than white rice because the grains are less processed and still have the outer bran layer. There are many ways to cook brown rice, two of which are the absorption method and stovetop method. First method: Absorption Method is a little faster than the second method. Add 1 part of rinsed brown rice and 2 parts water to a pan and bring to the boil. Reduce heat, cover and allow to simmer for 20-25 minutes. Remove from heat and stand covered for 5 mins. Second method: Pasta method. This results in very fluffy and tender rice. You cook the brown rice as you would pasta, by first bringing a pot of water to the boil and then adding the rice. Allow to cook for 30 mins, drain, and then return the rice to the empty pot (off the heat) and cover for 10 mins. This allows the excess water to steam off.
