Red rice is a special variety of long grain rice originating from the Heilongjiang region of North-East China. It gets its red color from its anthocyanin content, the same water soluble pigment that is responsible for the colors of berries. Unhulled red rice has high nutritional value compared to the polished rice varieties.

You can use red rice anywhere you would brown or white rice. Use for rice bowls, fried rice or pilafs. To prepare, bring 2.5 parts water to the boil over medium high heat. Once the water is boiling, add the rinsed rice and sprinkle of salt. Reduce to a simmer and allow to cook for about 30-40 mins or until tender and the water has evaporated.
