How to enjoy

The simplest method to prepare cannelini beans involves soaking them in a bowl of water overnight. The next day, drain the beans and place in a pot of cold water. Bring to the boil and skim any foam that forms at the surface. Reduce heat to medium and simmer, partially covered, for 45 minutes to 1 1/2 hours until beans are tender. The cooking time will depend on the beans’ variety, dryness and age.
